The company, Estate Ozhio, derives its name from the wine fields' location. It possesses a vineyard and wine cellar in Akhmeta, Kakheti, known for its exceptional microzone. The vineyard benefits from semi-damp soil, resulting in pure, sustainable, and eco-friendly grapes without artificial preservation. Additionally, Estate Ozhio has its own qvevri, an earthware vessel for fermenting, storing, and aging traditional Georgian wine.

HOW WE DO IT

Wine Making Process

1. Harvesting

We harvest our grapes on first part of October. We harvest exclusively by hand and transport to our Marani in small boxes.

2. Processing

Grapes are crushed, destimed and sent to Qvevris (clay jars) of 1500-2000 liter.

3.Fermentation

Crushed grapes start fermentation in Qvevris in contact with skins. After fermentation, skin maceration continue for 6 month for white grapes and 1,5 months for red grapes.

4. Aging

After Skin maceration, wine is rack-up from lies and skin and aged in other Qvevris. Kisi Reserve and Saperavi Reserve are aged in Oak Barrels for 6 month (Kisi Reserve) and 12 months
(Saperavi Reserve).
